Bela Pana
Bela Pana () is a drink made from bael (Aegle marmelos) fruit pulp. It is used on the festive occasion of Pana Sankranti (Odia new year) during the month of Baisakha, in Odisha, India. Ingredients Ripe bael, milk, black pepper, chhena, ¼ cup banana peeled and cut into tiny pieces, ½ cup honey or Jaggery, ½ cup yogurt, 2 cardamom, a handful of cashews ground separately, fistful of fresh grated coconut. Pana Sankranti
Pana Sankranti, ( or, ପଣା ସଙ୍କ୍ରାନ୍ତି) also known as Maha Bishuba Sankranti ( or, ମହା ବିଷୁବ ସଙ୍କ୍ରାନ୍ତି), is the traditional new year day festival of Odia people in Odisha, India. The festival occurs in the solar Odia calendar (the lunisolar Hindu calendar followed in Odisha) on the first day of the traditional solar month of Meṣa, hence equivalent lunar month Baisakha. This falls on the Purnimanta system of the Indian Hindu calendar. It therefore falls on 13/14 April every year on the Gregorian calendar. The festival is celebrated with visits to Shiva, Shakti or Hanuman temples. People take baths in rivers or major pilgrimage centers. Odia Cuisine
Odia cuisine is the cuisine of the Indian state of Odisha. Compared to other regional Indian cuisines, Odia cuisine uses less oil and is less spicy while nonetheless remaining flavourful. Rice is the staple food of this region. Mustard oil is used in some dishes as the cooking medium, but ghee (made of cow's milk) is preferred in temples. In old times food was traditionally served on copper plates or disposable plates made of sal leaves. Odia cooks, particularly from the Puri region, were much sought after due to their ability to cook food in accordance with Hindu scriptures.
