The glossary of wine terms lists the definitions of many general terms used within the wine industry. Viticulture
Viticulture (, "vine-growing"), viniculture (, "wine-growing"), or winegrowing is the cultivation and harvesting of grapes. It is a branch of the science of horticulture. While the native territory of ''Vitis vinifera'', the common grape vine, ranges from Western Europe to the Persian shores of the Caspian Sea, the vine has demonstrated high levels of adaptability to new environments, hence viticulture can be found on every continent except Antarctica. The duties of a viticulturist include monitoring and controlling pests and diseases, fertilizing, irrigation, canopy management, monitoring fruit development and characteristics, deciding when to harvest, and vine pruning during the winter months. Sherry
Sherry ( ) is a fortified wine produced from white grapes grown around the city of Jerez de la Frontera in Andalusia, Spain. Sherry is a drink produced in a variety of styles made primarily from the Palomino grape, ranging from light versions similar to white table wines, such as Manzanilla and fino, to darker and heavier versions that have been allowed to oxidise as they age in barrel, such as Amontillado and oloroso. Sweet dessert wines are also made from Pedro Ximénez or Moscatel grapes, and are sometimes blended with Palomino-based sherries. Under the official name of Jerez-Xérès-Sherry, it is one of Spain's wine regions, a (DOP). The word ''sherry'' is an anglicisation of Xérès (Jerez). German Wine
German wine is primarily produced in the west of Germany, along the river Rhine and its tributaries, with the oldest plantations going back to the Celts and Ancient Rome, Roman eras. Approximately 60 percent of German wine is produced in the state of Rhineland-Palatinate, where 6 of the 13 regions (''Anbaugebiete'') for quality wine are situated. Germany has about 104,000 hectares (252,000 acres or 1,030 square kilometers) of vineyard, which is around one tenth of the vineyard surface in Spain, France or Italy. The German wine classification system puts a strong emphasis on standardization and factual completeness, and was first implemented by the German Wine Law of 1971. Nearly all of Germany's vineyards are delineated and registered as one of approximately 2,600 Einzellagen ('individual sites'), and the produce from any vineyard can be used to make German wine at any quality level, as long as the must weight of the grapes reaches the designated minimum level. As the current German system does not classify vineyards by quality, the measure of wine ’quality’ is the ripeness of the grapes alone. Approximately 200 wine makers have been organised since 1910 in the Verband Deutscher Prädikatsweingüter (VDP). Amontillado
Amontillado () is a variety of sherry wine characterised by being darker than fino sherry, but lighter than oloroso sherry. Amontillado wine is named after the Montilla municipality, in Andalusia, Spain, where the style of sherry originated in the 18th century; commercially, the name "Amontillado" is used as a measure of colour to label any style of sherry that lay between the categories of ''fino'' and ''oloroso''. In American literature, Amontillado sherry features in the title of the short story "The Cask of Amontillado" (1846), by Edgar Allan Poe. The Alcohol and Tobacco Tax and Trade Bureau, statutorily named the Tax and Trade Bureau and frequently shortened to TTB, is a bureau of the United States Department of the Treasury, which regulates and collects taxes on trade and imports of alcohol, tobacco, and firearms within the United States. ISO 9000 defines quality control as "a part of quality management focused on fulfilling quality requirements". An appellation is a legally defined and protected geographical indication used to identify where the ingredients of a food or beverage originated, most often used for the origin of wine grapes. Restrictions other than geographical boundaries, such as what grapes may be grown, maximum grape yields, alcohol level, and other quality factors may also apply before an appellation name may legally appear on a wine bottle label. In France, the ''appellation d'origine contrôlée'' (, ; abbr. AOC ) is a label that identifies an agricultural product whose stages of production and processing are carried out in a defined geographical area – the ''terroir'' – and using recognized and traditional know-how. The specificity of an AOC product is determined by the combination of a physical and biological environment with established production techniques transmitted within a human community. Old vine (, ), a common description on wine labels, indicates that a wine is the product of grape vines that are notably old. There is a general belief that older vines, when properly handled, will give a better wine. There is no legal or generally agreed definition for ''old''. Usage Grape vines can grow for over 120 years. After about 20 years vines start to produce smaller crops, and average yields decrease; this leads to more concentrated, intense wines. Diseases such as " dead arm" can also afflict old vines; in some cases, this further concentrating the juice.
