Zweiback
Zwieback () is a form of rusk eaten in Austria, Belgium, Bosnia-Herzegovina, Bulgaria, Croatia, France, Germany, Greece, Italy, Luxembourg, The Netherlands, North Macedonia, Poland, Scandinavia, Serbia, Slovenia, Switzerland and Turkey. It is a type of crisp, sweetened bread, made with eggs and baked twice. It originated in East Prussia. According to Fabian Scheidler, Albrecht von Wallenstein invented zwieback to feed his mercenary army during the Thirty Years' War. The Mennonites brought ''Zwieback'' to the Russian Empire; before the Russian Revolution, when many emigrated to the west, they brought ''Zwieback'' to Canada, the United States and other parts of the world. There are two types of zwieback. One type is made by pinching round pieces of dough, placing one piece on top of another, pressing them together by pushing a finger down through both pieces. Mennonite Cuisine
Mennonite cuisine is food that is unique to and/or commonly associated with Mennonites, a Christian denomination that came out of sixteenth-century Protestant Reformation in Switzerland and the Netherlands. Because of persecution, they lived in community and fled to Prussia, Russia, North America, and Latin America. Groups like the Russian Mennonites developed a sense of ethnicity, which included cuisine adapted from the countries where they lived; thus, the term "Mennonite cuisine" does not apply to all, or even most Mennonites today, especially those outside of the traditional ethnic Mennonite groups. The Russian Mennonites ( it. Melba Toast
Melba toast is a dry, crisp and thinly sliced rusk, often served with soup and salad or topped with either melted cheese or pâté. It is named after Dame Nellie Melba, the stage name of Australian opera singer Helen Porter Mitchell. Its name is thought to date from 1897, when the singer was very ill and it became a staple of her diet. The toast was created for her by a chef who was also a fan of her, Auguste Escoffier, who also created the Peach Melba dessert for her. The hotel proprietor César Ritz supposedly named it in a conversation with Escoffier. Melba toast is made by lightly toasting slices of bread under a grill, on both sides.
