Pok Pok
Pok Pok was a group of Thai restaurants based in Portland, Oregon, founded and led by chef Andy Ricker. Pok Pok won both local recognition and major industry awards, with ''The Oregonian'' describing the restaurant as "one of those quintessentially Portland institutions, a sort of rags-to-riches story of the street cart that became a restaurant that became a legend." The main restaurant was located on Southeast Division Street in Portland; with its success Ricker opened satellite locations elsewhere in Portland, and at various times in Brooklyn, Los Angeles, and Las Vegas. Its remaining locations closed in 2020, during the COVID-19 pandemic. History The first Pok Pok opened in 2005, specializing in street food and northern Thai cuisine that Ricker had eaten on his travels, especially through Chiang Mai. Andy Ricker
Andy Ricker (born 1963) is an American chef, restaurateur and cookery writer, known for his skill and expertise in northern Thai cuisine. Life and career Ricker was born in North Carolina, and lived for a period in Jeffersonville, Vermont. He began working as a dishwasher at a fondue restaurant in Vermont at 16. Ricker left Vermont after graduating high school and moved to Vail, Colorado. After three and a half years as a cook, he left Colorado to pursue international travel. Whilst travelling, he accumulated culinary knowledge whilst backpacking, working and staging in New Zealand, Australia and Thailand, including in Raymond Blanc's Michelin star, Michelin-star restaurant Belmond Le Manoir aux Quat'Saisons in Oxfordshire. Floyd Cardoz
Floyd Cardoz (October 2, 1960 – March 25, 2020) was an Indian-American chef. He owned the New York City eatery Paowalla and was executive chef at Tabla, as well as victor on ''Top Chef Masters'' Season 3 in 2011. His New York restaurants were known for food melding Indian flavours and spices with western cuisine. Education and career After attending culinary school in Mumbai, India Floyd Cardoz went to Les Roches International School of Hotel Management, Switzerland. He moved to New York in 1988. He started working under Chef Gray Kunz at Lespinasse in 1992. He worked in various roles from chef de partie to executive sous chef.
