Pljeskavica ( sr-cyr, пљескавица, , Romanian: Plescaviță) is a Serbian grilled dish consisting of a mixture of spiced minced pork, beef and lamb meat. It is one of the national dishes of Serbia and is very popular in the neighbouring countries, such as Bosnia and Herzegovina, Croatia, and Montenegro. It is also popular street food in Romania, Hungary, Bulgaria, North Macedonia, Slovenia and other countries in Southeastern and Central Europe It is a main course served with onions, kajmak (milk cream), beans, sometimes ajvar (relish), and urnebes (spicy cheese salad), either on plate with side dishes, or with ''lepinja'' (flatbread, as a type of hamburger). Urnebes ( sr-cyr, Урнебес, , meaning 'disorder, mess') is a type of spread or salad characteristic of Serbian cuisine prominent in the city of Niš and southern Serbia. In Serbia, it is common to refer to both dishes consisting primarily of fresh leafy vegetables and thick sauces used as a condiment as salad. It is made of white cheese, kajmak and hot chili peppers, with salt and other spices. In Southern Serbia, it is made with chopped peppers, while ground dry peppers ('' aleva'') are used elsewhere, giving it a red color. Ajvar ( ; sr-Cyrl, Ajвар, ) is a condiment made principally from sweet bell peppers and eggplants. Kajmak
Kaymak, sarshir, or qashta/ashta ( ; or ; ) is a creamy dairy product, dairy food similar to clotted cream, made from the milk of water buffalo, cows, sheep, or goats in Central Asian cuisine, Central Asia, some Balkan cuisine, Balkan countries, some Caucasus countries, the Levant, Turkic peoples, Turkic regions, Iranian cuisine, Iran and Iraq. The traditional method of making kaymak is to boil the raw milk slowly, then simmer it for two hours over a very low heat.
