Peda Rythu
Peda () or Pera is an Indian sweet that originated in the city of Mathura, Uttar Pradesh, India. Traditionally prepared as thick, semi-soft round balls, its main ingredients are khoa, sugar and traditional flavourings including cardamom seeds. It is brown in colour. Variant spellings and names for the dessert include ''pedha'', ''penda'' (in Gujarati) and ''pera''. History & Etymology The word ''pda'' is derived from the Sanskrit word ''Piṇḍa'' or ''Piṇḍaka'' which refers to a lump of food and also a milk & flour-based sweet in the form of a lump. Charaka Samhita
The ''Charaka Samhita'' () is a Sanskrit text on Ayurveda (Indian traditional medicine). Along with the '' Sushruta Samhita'', it is one of the two foundational texts of this field that have survived from ancient India. It is one of the three works that constitute the Brhat Trayi. The text is based on the Agnivesha Samhitā, an older encyclopedic medical compendium by Agniveśa. It was revised by Charaka between 100 BCE and 200 CE and renamed ''Charaka Samhitā''. The pre-2nd century CE text consists of 8 books and 120 chapters. It describes ancient theories on the human body, etiology, symptomology and therapeutics for a wide range of diseases. History The earliest mention of kalakand as a sweet appears in the 19th-century Urdu text ''Zīnat al-ʿarūs''. However, contemporary sources state that kalakand was invented in the Baba Thakur Das & Sons halwai (confectioner) shop in Alwar, Rajasthan in 1947, where it is still sold today. Preparation To make kalakand, chhena (Indian cheese) is prepared and strained. Separately, whole milk and water are mixed, boiled, and stirred continuously until the mixture is reduced to half its original volume. Bal mithai ( Kumaoni: बाल मिठाई, ''Bāl Mithai'') is a brown chocolate-like fudge, made with roasted khoya and coated with white balls made of sugar coated roasted poppy seeds. It is a popular sweet from Kumaon, India. History Bal mithai originated in Kumaon. It was an invention of locals of Lal Bazaar, Almora, in the early twentieth century. Scholars believe that bal mithai initially must have been the name of the prime offering to the Sun God. Joga Lal Sah, a halwai was in business since 1865 in Lal Bazaar, Almora. He is the one credited for inventing the Bal mithai as it is known today. His shop is still functioning in Almora and is run by his descendants. Bal mithai came to prominence in the early 1900's. Rasgulla (literally "syrup filled ball") is a syrupy dessert popular in the Eastern South Asia, eastern part of South Asia. It is made from ball-shaped dumplings of chhena dough, cooked in light sugar syrup. This is done until the syrup permeates the dumplings. While it is near-universally agreed upon that the dessert originated in the eastern Indian subcontinent, the exact locus of origin is disputed between locations such as West Bengal, and Odisha, where it is offered at the Jagannath Temple, Puri, Puri Jagannath Temple.
