Máximo Bistrot
Máximo Bistrot, also known as Máximo, is a Mexican cuisine, Mexican and French cuisine, French restaurant in Mexico City. It was founded in 2011 by the chef Eduardo García (Mexican chef), Eduardo García and the restaurateur Gabriela López. The restaurant offers dishes made with seasonal Mexican ingredients, inspired by French cuisine techniques. The restaurant earned praise for emphasizing a farm-to-table concept by sourcing local ingredients. The restaurant was originally located on Tonalá Street, in Colonia Roma. In 2020, Máximo Bistrot was relocated to a larger space on Avenida Álvaro Obregón, expanding its kitchen facilities and rebranding to Máximo. Despite the delay caused by the COVID-19 pandemic in Mexico, COVID-19 pandemic, the restaurant grew to employ 120 people. Eduardo García (Mexican Chef)
Eduardo "Lalo" García Guzmán (born 1977 or 1978) is a Mexican chef and founder of Mexico City restaurants Máximo Bistrot, Lalo!, and Havre 77. He is often considered one of Mexico's top chefs. He received a Michelin star in 2025. Biography Born in Acámbaro, Michoacán, began his love of cooking at the age of 8 when his parents moved to the United States as migrant farm workers and gave him the task of preparing simple food such as chicken soups and meat with vegetables. García began his professional career in restaurants as a dishwasher in an Atlanta restaurant, working for Chef Scott Adair at the Purple Cactus Cafe. Birria () is a regional variation of barbacoa from western Mexico, mainly made with goat, beef or lamb. The meat is marinated in an adobo made of vinegar, dried chiles, garlic, and herbs and spices (including cumin, bay leaves, and thyme) before being cooked in a broth ().
