Chacha (brandy)
Chacha ( ka, ჭაჭა ''ch’ach’a'' ) is a Georgian pomace brandy, clear and strong (ranging between 40% alcohol for commercially produced to 85% for home brew), which is sometimes called "wine vodka", "grape vodka", or "Georgian cuisine, Georgian vodka/grappa". It is made of grape pomace (grape residue left after making wine). The term ''chacha'' is used in Georgia to refer to grape distillate. It may be also produced from unripe or wild grapes. Other common fruits or herbs used are Common fig, figs, tangerines, oranges, mulberry, mulberries or tarragon. The Kakheti region, which is in the easternmost part of the country, accounts for 75% of all vineyards (approximately 33,000 hectares) in Georgia. The Lisbon Agreement for the Protection of Appellations of Origin and their International Registration, signed on 31 October 1958, ensures that in member countries, appellations of origin receive protection when are protected in their country of origin. It lays down provisions for what qualifies as an appellation of origin, protection measures and establishes an International Register of Appellations of Origin, run by the World Intellectual Property Organization. The agreement came into force in 1966, and was revised at Stockholm (1967) and amended in 1979 and 2015.
