Lettuce Entertain You Enterprises, Inc. (LEYE) is a restaurant group currently comprising 120 or more restaurants mainly located in the Chicago metropolitan area. It was founded by Rich Melman and Jerry A. Orzoff in 1971. History The first restaurant, R.J. Grunts in Lincoln Park, Chicago, Lincoln Park, opened on June 10, 1971. It is still in operation, as of 2024. The company lists nine original partners: Bill Higgins, Melman, Bill Frost, Bob Wattel, Charles Haskell, Orzoff, Marvin Magid, Danny Koval and Fred Joast. By 1976 the company had 5 restaurants and a band called Fresh Lettuce. The partners continued expanding the company's network of restaurants. By the mid-1980s, the company employed over 2,000 people and had annual revenues of $40 million. Since its founding the company has opened 130 restaurants, with 70 concepts. Thai Dang is executive chef of HaiSous Vietnamese Kitchen in Chicago. His West Loop, Chicago restaurant Embeya was an ''Esquire'' magazine best new restaurant winner. Embeya closed in 2015 after his business partner committed a $300,000 embezzlement and fled the country to Spain. In 2020 a federal judge sentenced Attila Gyulai to three years of probation after he pled guilty to wire fraud following his arrest and extradition from Spain. Jean Joho is a French-American chef and restaurateur. He was chef and proprietor of Everest in Chicago (founded in 1986, closed 2020), Paris Club Bistro & Bar and Studio Paris in Chicago, The Eiffel Tower Restaurant in Las Vegas, and Brasserie Jo, first in Chicago, then in Boston. Early life and education Born in Barr, France, Joho was already working in his aunt's restaurant kitchen, peeling vegetables in full chef uniform and hat, by age six. Richard Michael Tramonto (born May 30, 1963) is a Chicago chef and cookbook author. He was executive chef and partner in Tru (restaurant), Tru, a contemporary fine-dining restaurant from Lettuce Entertain You Enterprises. Biography A native of Rochester, New York, Tramonto began his culinary career working in a Wendy's, Wendy's Old Fashioned Hamburgers. He later worked in New York City and London, England. Tru was a French restaurant located in the Streeterville neighborhood in Chicago. Tru was opened in 1999 by Rick Tramonto and Gale Gand with the backing of Rich Melman's Lettuce Entertain You Enterprises. The Magic Pan is a small American chain of fast-food and take-away creperies using the recipes of a now-closed chain of full-service restaurants that specialized in crêpes, popular in the early 1970s through early 1990s, which peaked at 110 Magic Pan locations throughout the United States and Canada.
