The Refinery was a restaurant in Seminole Heights, Florida in the United States. It was owned by Michelle and Greg Baker, who offer a weekly menu that includes molecular gastronomy and regional fare using ingredients such as tangerine juice, fennel, fish, acorn squash with bacon and beurre blanc. It received a nomination for the James Beard Award The James Beard Foundation Awards are annual awards presented by the James Beard Foundation to recognize chefs, restaurateurs, authors and journalists in the United States. Acorn Squash
Acorn squash (''Cucurbita pepo'' var. turbinata), also called pepper squash or Des Moines squash, is a winter squash with distinctive longitudinal ridges on its exterior and sweet, yellow-orange flesh inside. Beurre Blanc
''Beurre blanc'' (; ) or ''Beurre Nantais'' () is a warm emulsified butter sauce made with a reduction of vinegar and/or white wine (normally Muscadet) and shallots into which softened whole butter is whisked in off the heat to prevent separation. The small amount of emulsifiers naturally found in butter, including a trace of lecithin, is used to form an oil-in-water emulsion. Although similar to hollandaise in concept, it is considered neither a classic leading nor compound sauce. This sauce originates in the cuisine of the Loire-Atlantique department. Origin The chef Clémence Lefeuvre (née Clémence Prau) invented ''beurre blanc'', apparently by accident, sometime around the beginning of the 20th century. James Beard Award
The James Beard Foundation Awards are annual awards presented by the James Beard Foundation to recognize chefs, restaurateurs, authors and journalists in the United States. They are scheduled around James Beard's May 5 birthday.
