These factories process the beets to produce White sugar, refined sugar, similar to sugarcane in other regions. A sugar refinery is a refinery which processes raw sugar from cane or sugar extracted from beets into white refined sugar. Cane sugar mills traditionally produce raw sugar, which is sugar that still contains molasses, giving it coloration (and impurities) than the white sugar which is normally consumed in households and used as an ingredient in soft drinks and foods. Raw cane sugar does not need refining to be palatable. It is refined for reasons such as health, color, and the requirement for a pure sugar taste. Raw sugar is stable for transport and can be taken from mills to locations for processing into white sugar. ''The Sugar Factory'' is a 2007 collaborative album by English experimental musician Fred Frith and Scottish percussionist Evelyn Glennie. It comprises material drawn from improvisations by Frith and Glennie recorded during the making of the 2004 documentary film '' Touch the Sound'' about Glennie, who is profoundly deaf. The album was released in 2007 in the United States by Tzadik Records as part of their "Key Series". A soundtrack of the film was released in 2004, which contains some of Frith and Glennie's improvisations, plus additional music and sounds from the film.
