Stolichno is a Bulgarian bock beer ( bg, Столично пиво) produced by the Zagorka Brewery since 2004. The beer was originally brewed at Sofia's Ariana Brewery (hence the name, which literally means "of the capital city"). The modern history of beer in Bulgaria ( bg, пиво, ''pivo'' or бира, ''bira'') dates back to the 19th century, when it was introduced to the country by foreigners (from Austria-Hungary, France and Switzerland) shortly before the Liberation of Bulgaria. The Ariana Brewery is a defunct company, founded in 1884 in Sofia, Bulgaria under the name Sofia Brewery, changing to Ariana in 1996. Stolichnaya
Stolichnaya (russian: Столичная) is a vodka made of wheat and rye grain. It is a well-known Soviet brand. Since the dissolution of the Soviet Union the ownership of Stolichnaya has been disputed between the Russian state-owned company FKP Soyuzplodoimport and SPI Group, a private company chartered in Luxembourg. SPI Group have sold their version as Stoli since 2022. Production process Fermentation of Stolichnaya starts with wheat and rye grains and artesian water, and takes about 60 hours. Once fermentation is complete, the resulting liquid is distilled three times, to a strength of 96.4% alcohol by volume (ABV). That spirit is diluted to bottling strength using more artesian well water. It is then filtered through quartz, sand, activated charcoal and, finally, through cloth.
