Sherry Vinegar
Sherry vinegar () is a gourmet wine vinegar made from sherry. It is produced in the Spanish province of Cádiz and inside the triangular area between the city of Jerez de la Frontera and towns of Sanlúcar de Barrameda and El Puerto de Santa María, known as the "sherry triangle". In the USA, to be called ''vinagre de Jerez'', by law the sherry vinegar must undergo ageing in American oak for a minimum of six months, can only be aged within the "sherry triangle" and must have a minimum of 7 degrees acidity. Most sherry vinegars are aged using the same solera system as the sherry wines and Brandy de Jerez. The production and quality of sherry vinegar is monitored and controlled by the Consejo Regulador and sherry vinegar has its own Denominación de Origen and protected designation of origin (), which is protected by Spanish and EU law. Sherry ( ) is a fortified wine produced from white grapes grown around the city of Jerez de la Frontera in Andalusia, Spain. Vinaigrette ( , ) is made by mixing an edible oil with a mild acid such as vinegar (acetic acid) or lemon juice ( citric acid). The mixture can be enhanced with salt, herbs and/or spices. Pedro Ximénez (also known as PX and many other variations; Andalusian Spanish, Andalusian pronunciation ) is the name of a white Spanish wine grape variety grown in several Spanish wine regions but most notably in the (DO) of Montilla-Moriles. Palomino (grape)
Palomino Fino is a white grape widely grown in Spain and South Africa, and best known for its use in the manufacture of sherry. It is also grown in the Douro region of Portugal where it is used for table and fortified wines. Wine regions In Spain, the grape is split into the sub-varieties Palomino Fino, Palomino Basto, and Palomino de Jerez, of which Palomino Fino is by far the most important, being the principal grape used in the manufacture of sherry.
