Sherry Kennedy
Sherry ( es, jerez ) is a fortified wine made from white grapes that are grown near the city of Jerez de la Frontera in Andalusia, Spain. Sherry is produced in a variety of styles made primarily from the Palomino (grape), Palomino grape, ranging from light versions similar to white table wines, such as Manzanilla (wine), Manzanilla and fino, to darker and heavier versions that have been allowed to Redox, oxidise as they age in barrel, such as Amontillado and oloroso. Sweet dessert wines are also made from Pedro Ximénez or Moscatel grapes, and are sometimes blended with Palomino-based sherries. Under the official name of Jerez-Xérès-Sherry, it is one of Spain's wine regions, a Denominación de Origen, Denominación de Origen Protegida (DOP). Cádiz is a province of southern Spain, in the southwestern part of the autonomous community of Andalusia. It is the southernmost part of mainland Spain, as well as the southernmost part of continental Europe. Moscatel
Muscatel ( ) is a type of wine made from muscat grapes. The term is now normally used in the United States to refer to a fortified wine made from these grapes rather than just any wine made from these grapes. Fermentation (wine)
The process of fermentation in winemaking turns grape juice into an alcoholic beverage. During fermentation, yeasts transform sugars present in the juice into ethanol and carbon dioxide (as a by-product). In winemaking, the temperature and speed of fermentation are important considerations as well as the levels of oxygen present in the must at the start of the fermentation. The risk of stuck fermentation and the development of several wine faults can also occur during this stage, which can last anywhere from 5 to 14 days for ''primary fermentation'' and potentially another 5 to 10 days for a '' secondary fermentation''.
