Poire Williams
Poire Williams is the name for ''eau de vie'' (colorless, unsweetened fruit brandy) made from the Williams pear (also known as Williams' bon chrétien and as the Bartlett pear in the United States, Canada and Australia) in France and Switzerland. It is generally served chilled as an after-dinner drink. Some producers of Poire Williams include an entire pear inside each bottle, called ''prisonniÚre''. This is achieved by attaching the bottle to a budding pear tree so that the pear will grow inside it. Since 2001, ''Eau-de-vie de poire du Valais'' produced in the Valais, Canton of Valais, Switzerland has been protected as an ''Appellation d'origine protégée (Switzerland), Appellation d'origine protégée''. An ''eau de vie'' ( French for spirit, §16, §17 ) is a clear, colourless fruit brandy that is produced by means of fermentation and double distillation. The fruit flavor is typically very light. In English-speaking countries, ''eau de vie'' refers to a distilled beverage made from fruit other than grapes. Similar terms may be local translations or may specify the fruit used to produce it. Fruit brandy (or fruit spirit) is a distilled beverage produced from mash, juice, wine or residues of edible fruits. The term covers a broad class of spirits produced across the world, and typically excludes beverages made from grapes, which are referred to as plain brandy (when made from distillation from wine) or pomace brandy (when made directly from grape pomace). Apples, pears, apricots, plums and cherries are the most commonly used fruits. Williams Pear
The Williams' bon chrétien pear, commonly called the Williams pear, or the Bartlett pear in the United States and Canada, is a cultivar (cultivated variety) of the species ''Pyrus communis'', commonly known as the European pear. The fruit has a bell shape, considered the traditional pear shape in the west, and its green skin turns yellow upon later ripening, although red-skinned derivative varieties exist. It is considered a summer pear, not as tolerant of cold as some varieties. It is often eaten raw, but holds its shape well when baked, and is a common choice for canned or other processed pear uses.
