Paneer
Paneer (), is a fresh acid-set cheese, common in cuisine of South Asia, made from cow milk or buffalo milk. It is a non-aged, non-melting soft cheese made by curdling milk with a fruit- or vegetable-derived acid, such as lemon juice. Paneer was predominantly used in most north Indian dishes and is now commonly used throughout India due to its versatility as an ingredient in diverse dishes. Etymology The word ''paneer'' entered English from the Hindi-Urdu term ''panīr'', which comes from Persian () 'cheese', which comes from Old Iranian. Armenian (), Azerbaijani , Bengali ''ponir'' (পনির), Turkish and Turkmen , all derived from Persian , also refer to cheese of any type. History The origin of paneer is debated. Sour Milk Cheese
Acid-set or sour milk cheese is cheese that has been curdled (coagulated) by natural souring, often from lactic acid bacteria, or by the addition of acid. This type of cheese is technologically simple to produce. When making soft acid-set cheese using bacteria, the coagulum results from production of lactic acid by the starter microorganisms. Cheeses can be classified according to a variety of features including ripening characteristics, special processing techniques (such as cheddaring) or method of coagulation. Acid-setting is a method of coagulation that accounts for around 25% of cheese production. These are generally fresh cheeses like, queso blanco, quark (dairy product), quark and cream cheese. The other 75%, which includes almost all ripened cheeses, are rennet cheeses. Ricotta and most other whey cheeses are made by first heating the milk to between 90 and 92 degrees Celsius to create coprecipitation of casein and whey protein before addition of lactic or citric acid. ...

Cheese is a type of dairy product produced in a range of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk (usually the milk of cows, buffalo, goats or sheep). During production, milk is usually acidified and either the enzymes of rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout. Over a thousand types of cheese exist, produced in various countries. Catherine Donnelly
Catherine Wright Donnelly (born 1956) is Professor of Nutrition and Food Science at the University of Vermont, and the Editor-in-Chief of ''The Oxford Companion to Cheese'', which won the 2017 James Beard Award for Reference and Scholarship. Education Donnelly received her B.S. from the University of Vermont after attending school there from 1974 to 1978. Her degrees include a M.S. and Ph.D. in food science, both from North Carolina State University, specializing in food microbiology. Career Donnelly joined the faculty of the University of Vermont in 1983. At that time, a large outbreak of illness caused by a relatively unknown bacterium, ''Listeria monocytogenes'', occurred in Boston, Massachusetts. Om Prakash (historian)
Om Prakash (born January 1940, in Delhi) is an Indian economic historian. He is noted for his work on the Dutch East India Company in Bengal, and also for his work on coinage, precious metal trade, and other aspects of pre-colonial commerce between Europe and India. In 2005, he was knighted by the Dutch queen. Early life and education He did his M.A. from the Delhi School of Economics in 1961, ranking first, and continued with his PhD in Economic History. His thesis, ''The Dutch East India Company and the Economy of Bengal, 1630-1720'', is based on archival material from the Nationaal Archief at the Hague. Otto Schrader (born 28 March 1855 in Weimar; died 21 March 1919 in Breslau) was a German philologist best known for his work on the history of German and Proto-Indo-European vocabulary dealing with various aspects of material culture, such as the names of domesticated plants and animals, the names of the metals, etc. Education and early life Schrader came from a civil servant family in Thuringia, attended Gymnasium in Weimar, and studied in Jena, Leipzig, and Berlin. When he received the Dr. phil. degree, in 1878 he received a teaching position at the Großherzogliches Gymnasium in Jena. There he received his habilitation in 1887 and in 1890 received the title of Professor. In 1909 he moved to Breslau, where he was an "ordentlicher Professor". Arthur Berriedale Keith, FBA (5 April 1879 – 6 October 1944) was a Scottish constitutional lawyer, scholar of Sanskrit and Indologist. He became Regius Professor of Sanskrit and Comparative Philology and Lecturer on the Constitution of the British Empire in the University of Edinburgh. He served in this role from 1914 to 1944.
