Leach (food)
A leach (sometimes leech or leche) was a popular medieval sweetmeat (confection) consisting of a thick, jelly-like preserve which set hard enough to be sliced for serving. The pastry consisted of sugar and flavourings such as almonds, dates, dried fruit, peel, and fruit extracts (such as rose water), sometimes spiced with ginger, aniseed, cinnamon and other spices or with milk added, and thickened with isinglass or gum arabic. Leaches were often shaped or moulded into fancy shapes such as hearts, diamonds, clubs, spades, or crescent moons. They would feature as a decorative display on a silver tray at the dessert course of banquets, where specialised sweetmeat spoons with a fork at the handle end might be provided. They were also eaten throughout the day (perhaps as a breath freshener), and were a favourite of Queen Elizabeth I of England (). Isinglass
Isinglass ( ) is a form of collagen obtained from the dried swim bladders of fish. The English word origin is from the obsolete Dutch ''huizenblaas'' – ''huizen'' is a kind of sturgeon, and ''blaas'' is a bladder, or German ''Hausenblase'', meaning essentially the same. The bladders, once removed from the fish, processed, and dried, are formed into various shapes for use. It is used mainly for the Clarification (wine), clarification or fining of some beer and wine. It can also be cooked into a paste for specialised Fish glue, gluing purposes. Although originally made exclusively from sturgeon, especially Beluga (sturgeon), beluga, in 1795 an invention by William Murdoch facilitated a cheap substitute using cod. This was extensively used in United Kingdom, Britain in place of Russian isinglass, and in the US hake was important. Gum Arabic
Gum arabic (gum acacia, gum sudani, Senegal gum and by other names) () is a tree gum exuded by two species of '' Acacia sensu lato:'' '' Senegalia senegal,'' and '' Vachellia seyal.'' However, the term "gum arabic" does not indicate a particular botanical source. The gum is harvested commercially from wild trees, mostly in Sudan (about 70% of the global supply) and throughout the Sahel, from Senegal to Somalia. The name "gum Arabic" (''al-samgh al-'arabi'') was used in the Middle East at least as early as the 9th century. Gum arabic first found its way to Europe via Arabic ports and retained its name of origin. Gum arabic is a complex mixture of glycoproteins and polysaccharides, predominantly polymers of arabinose and galactose. Elizabeth I (7 September 153324 March 1603) was List of English monarchs, Queen of England and List of Irish monarchs, Ireland from 17 November 1558 until her death in 1603. The Queen-Like Closet
''The Queen-like Closet, Or, Rich Cabinet'' was a cookery book published in 1670 by the English writer on household management, Hannah Woolley (1622 – c.1675). It ran through five English editions by 1684. At least two German editions were also printed. The book provides a recipe for trifle, involving cream but no custard, a gooseberry fool, hot chocolate, and cheesecakes. Woolley's mince pies still contain meat as well as dried fruits. Ingredients include pumpkins and molasses from the New World. The book contains the first known recipe for Sussex pond pudding. Context Woolley had already published two books, ''The Ladies Directory'' in 1661, and ''The Cooks Guide'' in 1664.
