Choi was signed by the Los Angeles Dodgers in 2018 for a $300,000 signing bonus as a 17-year old High School pitcher from Korea. He made his professional debut in 2019 with in the Arizona League, where he was 5–1 with a 2.63 ERA in 14 games (11 starts). He struck out 71 in 65 innings. Choi missed the 2020 season as a result of the cancellation of the minor league season due to the COVID-19 pandemic and was assigned to the Rancho Cucamonga Quakes to start the 2021 season before being promoted to High-A Great Lakes Loons at mid-season.
