Beaujolais ( , ) is a French ''Appellation d'Origine Contrôlée'' (AOC) wine in the Burgundy region. Beaujolais wines are generally made of the Gamay grape, which has a thin skin and is low in tannin, but like most AOC wines they are not labeled varietally. Whites from the region, which make up only 1% of its production, are made mostly with Chardonnay grapes though Aligoté is also permitted until 2024 (on condition the vines were planted before 2004). Beaujolais tends to be a very light-bodied red wine, with relatively high amounts of acidity. In France, the ''appellation d'origine contrôlée'' (, ; abbr. AOC ) is a label that identifies an agricultural product whose stages of production and processing are carried out in a defined geographical area – the ''terroir'' – and using recognized and traditional know-how. The specificity of an AOC product is determined by the combination of a physical and biological environment with established production techniques transmitted within a human community. Together, these give the product its distinctive qualities. The defining technical and geographic factors are set forth in standards for each product, including wines, cheeses and meats. The use of wine tasting descriptors allows the taster to qualitatively relate the aromas and flavors that the taster experiences and can be used in assessing the overall quality of wine. Wine writers differentiate wine tasters from casual enthusiasts; tasters attempt to give an objective description of the wine's taste (often taking a systematic approach to tasting), casual enthusiasts appreciate wine but pause their examination sooner than tasters. Mâconnais
The Mâconnais () district is located in the south of the Burgundy wine region in France, west of the Saône river. It takes its name from the town of Mâcon. It is best known as a source of good value white wines made from the Chardonnay grape; the wines from Pouilly-Fuissé are particularly sought-after. Almost all the wine made in the Mâconnais is white wine. Chardonnay is the main grape grown in the district—in fact, there is a Chardonnay, Saône-et-Loire, village of that name in the far north of the region. Côte Chalonnaise
Côte Chalonnaise is a subregion of the Burgundy wine region of France. Côte Chalonnaise lies to the south of the Côte d'Or continuing the same geology southward. It is still in the main area of Burgundy wine production but it includes no Grand cru vineyards. Like the Côte d'Or, it is at the western edge of the broad valley of the river Saône, on the rising ground overlooking the town of Chalon-sur-Saône which is about six kilometers out into the plain. Côte D'Or (escarpment)
The Côte d'Or () is a limestone escarpment in Burgundy, France, and the namesake of the department in which it is located. It stretches from Dijon in the north to the river Dheune to the south, overlooking the valley of the Saône to the east. The east-facing slope of the Côte d'Or is home to Burgundy wines such as Gevrey-Chambertin, Clos de Vougeot, Meursault and Montrachet.
