A carvery is a pub or a restaurant where cooked meat is freshly sliced to order for customers, sometimes offering unlimited servings in a buffet style for a fixed price. The term is most commonly used in the United Kingdom, Ireland, Cyprus, and Commonwealth countries like Canada and Australia, but it is also found in the United States. Description Carveries are often found in pubs and hotels, and are particularly commonly held at weekends, when they offer traditional Sunday roasts to a potentially large number of people. The meat is usually accompanied by a choice of potato (boiled, mashed and roasted), stuffing, and vegetables (commonly including carrots, parsnips, peas and other traditional British vegetables). Brewers Fayre is a licensed pub restaurant chain, with 161 locations across the UK as of August 2018. Owned by Whitbread, Brewers Fayre restaurants are known for serving traditional British pub food and for their Sunday Carvery. History The first Brewers Fayre pub opened in 1981 near Preston, and was called The "Farmers Arms". Vic and Jean Ellis took over the pub in 1979 and Whitbread promised a refurbishment if they returned a profit (which they did within a year). Harvester is a British casual dining restaurant chain with over 230 outlets (as of December 2015) in the United Kingdom. The first location was The George Inn, opening in 1983 in Morden, Greater London. The chain was seen before as a rival to Whitbread's Beefeater restaurants. Bass On 21 July 1995, Bass bought the seventy eight restaurants of Harvester for £165 million. Whitbread had offered £150 million for the chain. Most Harvesters were in the South East, and Bass had plans to rebrand other restaurants (such as the former Innkeeper's Fayre) elsewhere in England as Harvesters. A nippy was a waitress who worked in the J. Lyons & Co tea shops and cafés in London. Beginning in the late 19th century, a J. Lyons waitress was called a "Gladys". From 1926, because the waitresses nipped (moved quickly) around the tea shops, the term "Nippy" came into use. Nippies wore a distinctive maid-like uniform with a matching hat. Image and reality By the 1920s it was already long established in the advertising world that attractive females could sell products, and the tea business of J. Lyons & Co was no exception. Nippies appeared in all manner of advertising, on product packages, and on promotional items. The Nippy soon became a national icon.
