Caidao
A Chinese chef's knife — sometimes referred to as a Càidāo ( zh, 菜刀, lit. "vegetable knife"), is a Chinese, rectangular-bladed, all-purpose chef's knife used to prepare a variety of meats, fish and vegetables. The popularity of this style of knife has spread with the associated cuisines. They resemble Western cleavers in appearance, but most Chinese chef's knives are relatively thin-bladed and designed for slicing, finely chopping and mincing vegetables, fish and boneless meats. The heavier ''gǔdāo'' ( zh, 骨刀, lit. "bone knife") are produced and are used much like Western-type meat cleavers to prepare large sides of beef, pork and other boned meats. Santoku
The santoku bōchō or bunka bōchō is a general-purpose kitchen knife originating in Japan. Its blade is typically between long, and has a flat edge. The santoku has a sheepsfoot, sheep's foot-tipped blade that curves down an angle approaching 60 degrees at the point. The bunka bōchō, however, has a k-tip (aka reverse tanto). A cleaver is a large knife that varies in its shape but usually resembles a rectangular-bladed tomahawk. Kinmen Knife
The Kinmen knife () is a Chinese-style chef knife exclusively made in Kinmen County in Republic of China. The knives were once made from the remains of artillery shells fired by the United States and Allied forces in World War II, when the island was occupied by the Empire of Japan, and by mainland China between 1958 and 1978. During the Second Taiwan Strait Crisis, the People's Liberation Army (PLA) of the People's Republic of China fired around 1,000,000 shells at the Kinmen islands in its conflict against the Republic of China which controls the islands. The shells have become a resource of steel for the local economy. Since the Second Taiwan Strait Crisis, Kinmen has become famous for its production of knives made from PRC artillery shells.
