Bremner Biscuit Company
The Bremner Biscuit Company was founded by David F. Bremner in Chicago, Illinois. Bermner first introduced his brands of bread to the fire victims of the Great Chicago Fire. Although the Bremner Wafer wasn't invented until 1902, David Bremner's company was modestly successful prior to its invention. When his sons took over the business circa 1905 they developed the Bremner Wafer, which is still sold today. The company remained in Chicago until 1984, when they moved to Denver, where it remains today. Great Chicago Fire
The Great Chicago Fire was a conflagration that burned in the American city of Chicago during October 8–10, 1871. The fire killed approximately 300 people, destroyed roughly of the city including over 17,000 structures, and left more than 100,000 residents homeless. The fire began in a neighborhood southwest of the city center. A long period of hot, dry, windy conditions, and the wooden construction prevalent in the city, led to the conflagration. The fire leapt the south branch of the Chicago River and destroyed much of central Chicago and then leapt the main branch of the river, consuming the Near North Side. Help flowed to the city from near and far after the fire. The city government improved building codes to stop the rapid spread of future fires and rebuilt rapidly to those higher standards. Bremner Wafer
Bremner Wafers are made by the Bremner Biscuit Company. The company claims that the crackers "have a neutral taste" and that they are "perfect for pairing with fine wine or savoring with cheese and pâté or seafood, soups and salads". It is because of this "neutral" taste that many wineries and food aficionados around the world prefer using the Bremner wafer as a wine tasting cracker. This neutral taste, however is seen as a drawback by some because it means the crackers are nearly tasteless when eaten alone. Flavors In 2001, the Caraway Wafers were introduced, being marketed as combining "...the delicate flavor of caraway seeds with the crunch of Bremner Biscuits." Dare Foods, Limited is a Canada-based food manufacturing company. They have seven factories in Canada and the United States. Their products are distributed in North America and at least 25 other countries. Company history In 1892, the founder of Dare Foods, Charles H. Doerr began making and selling cookies and candies in a small grocery shop in Berlin, Ontario, Canada. By 1919, Doerr had created the C.H. Doerr Company, which distributed his goods throughout Ontario. Following Charles's death in 1941, the company was led by his twenty-four-year-old grandson Carl Doerr. Carl had been raised by his paternal grandparents after both his parents died of the Spanish flu.
