Brava Cattle
The Brava or Race de Combat is a French breed of domestic cattle raised in the Camargue, the delta of the Rhône in southern France. It is bred specifically for bull-fighting, either Spanish-style (on foot) or Portuguese-style (on horseback). It is one of two cattle breeds raised in semi-feral conditions in the Camargue: the other is the Raço di Biòu or Camargue breed, which is not a fighting breed but is used in a bloodless bull-sport, the '' course camarguaise''. The Brava derives from Iberian fighting cattle imported in the nineteenth century, and may also be known as the Espagnole Brava. The Camargue (, also , , ; ) is a coastal region in southern France located south of the city of Arles, between the Mediterranean Sea and the two arms of the Rhône river delta. The eastern arm is called the Grand Rhône; the western is the ''Petit Rhône''. Administratively, it lies within the department of Bouches-du-Rhône (‘Mouths of the Rhône’); it spans portions of the communes of Arles, Saintes-Maries-de-la-Mer and Port-Saint-Louis-du-Rhône. Dark Cutting
A darkcutter or dark cutter (also known as DFD, or Dark Firm Dry) is a carcass of beef that has been subjected to undue stress before slaughter, and is dark in color. Sometimes referred to as dark cutting beef, they have a dark color which makes the meat appear less fresh, making them undesirable to consumers. Darkcutters fetch a lower price than otherwise ordinary beef on the market. Desirable meat has a slightly acidic pH level, from 5.3 to 5.7, which is a result of the conversion of glycogen to lactic acid. Poor feeding or handling will mean that no glycogen is available, so lactic acid cannot be produced to lower the pH.
