Vermont Creamery is a creamery and artisanal cheese and butter-maker in Websterville, Vermont, USA. It was founded in 1984 by business partners Allison Hooper and Bob Reese. Previously known as the Vermont Butter and Cheese Company, the company adopted its current name in 2013. History and products The creamery produces a variety of fresh and aged dairy products from cows' and goats' milk. Cow cream and butter products sold by the company are crème fraîche, crème fraîche-vanilla and cultured butter. Cows' fresh cheese products sold by the company are fromage blanc, mascarpone and quark. Goats' aged cheese products sold by the company are bijou, Bonne Bouche, Coupole and Cremont. Goats' fresh cheese products sold by the company are creamy goat cheese, feta, fresh crottin, fresh goat cheese and fresh goat cheese-crumbled. Creamery
A creamery is a place where milk and cream are processed and where butter and cheese is produced. Cream is separated from whole milk; pasteurization is done to the skimmed milk and cream separately. Whole milk for sale has had some cream returned to the skimmed milk. The creamery is the source of butter from a dairy. Cream is an emulsion of fat-in-water; the process of churning causes a phase inversion to butter which is an emulsion of water-in-fat. Excess liquid as buttermilk is drained off in the process. Modern creameries are automatically controlled industries, but the traditional creamery needed skilled workers. Traditional tools included the butter churn and Scotch hands. Brookfield, Vermont
Brookfield is a town in Orange County, Vermont, United States. It was created by Vermont charter on August 5, 1781. The population was 1,244 at the 2020 census. Brookfield is best known for its floating bridge which spans Sunset Lake buoyed by pontoons. The bridge, which is the only floating bridge east of the Mississippi River, was originally built in 1820 by Luther Adams and his neighbors. Sunset Lake is also the site of an annual ice harvesting festival. Brookfield boasts that it has Vermont's oldest continually operating library dating back to 1791.
