The ( zh, c=笙) is a Chinese mouth-blown polyphonic free reed instrument consisting of vertical pipes. It is one of the oldest Chinese instruments, with images depicting its kind dating back to 1100 BCE, and there are original instruments from the Han dynasty that are preserved in museums today. In the context of traditional Chinese tea production terminology, fermentation refers to microbial fermentation (called 'wet piling'), and is typically applied after the tea leaves have been sufficiently dried and rolled.
