Sea Island Red Pea
Sea Island red pea is an heirloom landrace of cowpea from the Gullah corridor of the Sea Islands. They are an integral part of Gullah cuisine and have been listed on the Ark of Taste. History Prelude The centre of diversity of the cultivated cowpea is West Africa, leading an early consensus that this is the likely centre of origin and place of early domestication. Charred remains of cowpeas have been found in rock shelters located in Central Ghana dating to the 2nd millennium BCE. By the 17th century cowpeas began to be cultivated in the New World via the Trans-Atlantic slave trade; being used as slave food and provisions. The Atlantic slave trade or transatlantic slave trade involved the transportation by slave traders of enslaved African people to the Americas. Sean Brock is an American chef specializing in Southern cuisine. Early life and education Brock is originally from Pound in rural southwest Virginia. His father, who owned a trucking fleet that hauled coal, died when Brock was 11, resulting in the family becoming impoverished. He started working on the line at age 16. Brock graduated from culinary school at Johnson & Wales University in 2000. Waakye ( ) or Awaakye is a Ghanaian dish of cooked rice and beans, commonly eaten for breakfast or lunch. However, others eat it for supper. Hoppin' John, also known as Carolina peas and rice, is a rice and beans dish of legendary origins associated with the cuisine of the Southern United States. Similar dishes are found in regions with a significant African-origin demographic like Louisiana red beans and rice. The Carolina version is known for the addition of bacon and other kinds of pork.
