Thousand Island Dressing
Thousand Island dressing is a creamy salad dressing and condiment made from a base of mayonnaise and usually ketchup or tomato purée and chopped pickles, (Note: 2 different recipes are offered in this book) and typically including a variety of other ingredients. Thousand Islands
The Thousand Islands (, ) constitute a North American archipelago of 1,864 islands that straddles the Canada–US border in the Saint Lawrence River as it emerges from the northeast corner of Lake Ontario. They stretch for about downstream from Kingston, Ontario. The Canadian islands are in the province of Ontario and the U.S. islands in the state of New York. The islands range in size from over to smaller islands occupied by a single residence, or uninhabited outcroppings of rocks. Oscar Tschirky (1866 – November 6, 1950) was a Swiss-American restaurateur who was maitre d'hotel, maître d'hôtel of Delmonico's Restaurant and subsequently the Waldorf-Astoria Hotel in Manhattan, New York, United States. He was widely known as "Oscar of the Waldorf" and published a large cookbook. Early life and education Oscar Tschirky was born in 1866 in Le Locle, Switzerland.
