A sandwich cookie ( US and Canada), also known as a sandwich biscuit ( UK, Ireland, Australia, New Zealand, and South Africa), is a type of cookie made from two cookies with a filling between them. Typically the hard, thin cookies known as biscuits outside North America are used, though some sandwich cookies use softer or thicker cookies. Many types of fillings are used, such as cream, ganache, buttercream, chocolate, cream cheese, jam, peanut butter, lemon curd, or ice cream. Though they can be homemade, sandwich cookies are typically mass-produced and sold commercially. Monte Carlo biscuits are an Australian sweet biscuit that have been manufactured since by Arnott's Biscuits Holdings. Each biscuit comprises two biscuit layers sandwiching a creamy filling. While many such biscuits are moulded to a design, both sides of the Monte Carlo biscuit are rough. The biscuit layers have a mild taste of golden syrup, honey and coconut, and the cream layer consists of a vanilla flavoured cream filling surrounded by a thin toffee-like coating of raspberry jam. Milano (cookie)
The Milano cookie is a trademarked cookie manufactured by Pepperidge Farm as part of its series of "European" cookies. Each cookie consists of a thin layer of chocolate and, depending on the variety, different flavored filling sandwiched between two biscuit cookies. Hydrox
Hydrox is a creme-filled chocolate sandwich cookie currently owned and manufactured by Leaf Brands. It debuted in the United States in 1908, and was manufactured by Sunshine Biscuits for over 90 years. Hydrox was largely discontinued in 1999, three years after Sunshine was acquired by Keebler Company, Keebler, which was later acquired by Kellogg's which in turn sold the cookie line and the rights to the Keebler name to Ferrero SpA. In September 2015, the product was reintroduced by Leaf Brands. Oreo was created in 1912 as an imitation of Hydrox. Happy Faces
Happy Faces are a brand of biscuit made by United Biscuits' subsidiary Jacob's Bakery Ltd. Similar to Jammie Dodgers, they are composed of two pieces of shortcake filled in the middle with raspberry jam and (unlike Jammie Dodgers) cream. The shortcake pieces are imprinted with faces (five types) that have holes where the eyes and mouth would go which allows one to see the filling. The biscuits are 45mm in diameter and sold in packs of 10. Involved in the original design process was Project and Design Engineer Peter Stitson for the biscuit making machinery in the late 60s or 70s when the company was known as Nabisco Frears. Happy Face was discontinued as a separate product in the mid 2010s and since were only found in ''Family Circle'' biscuit packs until 2020. Vanilla is a spice derived from orchids of the genus ''Vanilla (genus), Vanilla'', primarily obtained from pods of the flat-leaved vanilla (''Vanilla planifolia, V. planifolia'').
