Quebecol
Quebecol is a polyphenolic chemical compound that has been isolated from maple syrup. It has the chemical formula C24H26O7 and the systematic name 2,3,3-tri-(3-methoxy-4-hydroxyphenyl)-1-propanol. Analysis of maple sap before it is converted into syrup suggests that this compound is not naturally present in the sap but, instead, is formed during extraction or processing. A total synthesis of the compound was reported in 2013. Maple Syrup
Maple syrup is a sweet syrup made from the sap of maple trees. In cold climates, these trees store starch in their trunks and roots before winter; the starch is then converted to sugar that rises in the sap in late winter and early spring. Maple trees are tapped by drilling holes into their trunks and collecting the sap, which is processed by heating to evaporate much of the water, leaving the concentrated syrup.
