Piołunówka
Piołunówka () is a very bitter alcoholic infusion (Polish: "nalewka") made by Maceration (wine), macerating Artemisia (plant), wormwood in alcohol. Its name comes from . Piołunówka is considered a cure for problems with digestive tract and is believed to enhance appetite. Therefore, traditionally it is consumed in small amounts. Piołunówka differs from absinthe in that it is macerated and rarely distilled, whereas absinthe is additionally distilled. It is becoming popular due to the Absinthe, absinthe revival but has been well known before absinthe. Piołunówka is not simply an amateur's version of absinthe but can be perceived as its predecessor. For centuries wormwood-based elixirs have been used as digestive aids and disease preventatives. Thujone () is a ketone and a terpene, monoterpene that occurs predominantly in two diastereomeric (epimeric) forms: (−)-α-thujone and (+)-β-thujone. Though it is best known as a chemical compound in the spirit absinthe, it is only present in trace amounts and is unlikely to be responsible for the spirit's purported stimulant and psychoactive effects. Thujone acts on the GABAA receptor, GABAA receptor as an antagonist. As a competitive antagonist of GABAA receptor, thujone alone is considered to be convulsant, though by interfering with the inhibitory transmitter GABA, it may convey stimulating, mood-elevating effects at low doses. It is also found in perfumery as a component of several essential oils. Nalewka
Nalewka (), plural nalewki, is a traditional alcoholic beverage from Poland. Similar to medicinal tinctures, it is usually 40% to 45% alcohol by volume, though some can be as strong as 75%. Nalewka is created by macerating and / or infusing various ingredients in alcohol, usually vodka or neutral spirits. Among the ingredients often used are fruits, herbs, spices, roots, sugar and honey. The name ''nalewka'' is currently being registered for national appellation within the European Union. Unlike ordinary liqueurs, nalewki are usually aged. Since nalewka is produced by infusion rather than distillation, the liquid is typically colorful and somewhat opaque. Maceration is the winemaking process where the phenolic materials of the grape— tannins, coloring agents ( anthocyanins) and flavor compounds—are leached from the grape skins, seeds and stems into the must. To macerate is to soften by soaking, and maceration is the process by which the red wine receives its red color, since raw grape juice (with the exceptions of teinturiers) is clear-grayish in color. In the production of white wines, maceration is either avoided or allowed only in very limited manner in the form of a short amount of skin contact with the juice prior to pressing. This is more common in the production of varietals with less natural flavor and body structure like Sauvignon blanc and Sémillon.
