Haggis ( ) is a savoury pudding containing sheep's pluck (heart, liver, and lungs), minced with chopped onion, oatmeal, suet, spices, and salt, mixed with stock, and cooked while traditionally encased in the animal's stomach though now an artificial casing is often used instead. According to the 2001 English edition of the '' Larousse Gastronomique'': "Although its description is not immediately appealing, haggis has an excellent nutty texture and delicious savoury flavour". It is believed that food similar to haggis — perishable offal quickly cooked inside an animal's stomach, all conveniently available after a hunt — was eaten from ancient times. Alan Eaton Davidson Order of St Michael and St George, CMG (30 March 1924 – 2 December 2003) was a British diplomat and writer best known for his writing and editing on food and gastronomy. After leaving Queen's College, Oxford, in 1948, Davidson joined the British diplomatic service, rising through the ranks to conclude his career as ambassador to Laos, from 1973 to 1975. He retired early and devoted himself to full-time writing about food, encouraged by Elizabeth David and others. Gervase (or Jervis) Markham (ca. 1568 – 3 February 1637) was an English poet and writer. William Dunbar
William Dunbar (1459 or 1460 – by 1530) was a Scottish makar, or court poet, active in the late fifteenth and early sixteenth centuries. He was closely associated with the court of King James IV and produced a large body of work in Scots distinguished by its great variation in themes and literary styles. Flyting Of Dunbar And Kennedy
''The Flyting of Dunbar and Kennedie'' is the earliest surviving example of the Scottish version of the flyting genre in poetry. The genre takes the form of a contest, or "war of words", between two poets, each trying to outclass the other in vituperation and verbal pyrotechnics. It is not certain how the work was composed, but it is likely to have been publicly performed, probably in the style of a poetic joust by the two combatants, William Dunbar and Walter Kennedy, before the Court of James IV of Scotland. The precise date of the event is not certain, but thought to have been around 1500. There are clues in the poem that suggest some of the features that the show must have contained. Each of the combatants had a ''commissar'', both of whom are named in the work and sometimes directly addressed by the performers. ''Liber Cure Cocorum'' is an English cookbook dating from around the year 1430 and originating from County of Lancashire. Unusually for a cookbook, the recipes are written in rhyming verse. Text It was first printed from a transcript made by Richard Morris in 1862 from a text in the Sloane Manuscript Collection (No.1986, British Museum, now British Library), found as an appendix to the " Boke of Curtasye".
