Conching
upright=1.35, Conche (in the Imhoff-Schokoladenmuseum) Conching is a process used in the manufacture of chocolate whereby a surface scraping mixer and agitator, known as a conche, evenly distributes cocoa butter within chocolate and may act as a "polisher" of the particles. It also promotes flavor development through frictional heat, release of volatiles and acids, and oxidation. The name arises from the shape of the vessels initially used which resembled conch shells. When ingredients are mixed in this way, sometimes for up to 78 hours, chocolate can be produced with a mild, rich taste. Since the process is so important to the final texture and flavor of chocolate, manufacturers keep the details of their conching process proprietary.McClements, D. Julian ''Understanding and Controlling the Microstructure of Complex Foods'', Woodhead Publishing, 2007, , page 654. The conching technique was introduced in Switzerland in the late 19th century. Conched chocolates were distingui ...

Chocolate
Chocolate is a food made from roasted and ground cocoa beans that can be a liquid, solid, or paste, either by itself or to flavoring, flavor other foods. Cocoa beans are the processed seeds of the cacao tree (''Theobroma cacao''); unprocessed, they taste intensely bitter. In making chocolate, these seeds Cocoa bean fermentation, are usually fermented to develop the flavor. They are then dried, cleaned, and roasted. The shell is removed to reveal nibs, which are ground to chocolate liquor: unadulterated chocolate in rough form. The liquor can be processed to separate its two components, cocoa solids and cocoa butter, or shaped and sold as unsweetened baking chocolate. By adding sugar, sweetened chocolates are produced, which can be sold simply as dark chocolate (a.k.a., plain chocolate), or, with the addition of milk, can be made into milk chocolate. Making milk chocolate with cocoa butter and without cocoa solids produces white chocolate. In some chocolates, other ingredients ...

Rodolphe Lindt
Rudolf Lindt (16 July 1855 – 20 February 1909), often known by his francized name Rodolphe Lindt, was a Swiss chocolate maker, chocolatier and inventor. He founded the Lindt brand of Swiss chocolate and invented the conching machine and other processes to improve the quality of chocolate. Life Lindt was born on 16 July 1855 in Bern, to pharmacist and politician Johann Rudolf Lindt and his wife Amalia Eugenia Salchli. Between 1873 and 1875 he did an apprenticeship in Lausanne with the ''Amédée Kohler & Fils'' chocolate company, then managed by the sons of Charles-Amédée Kohler. In 1879, he founded his own chocolate factory in the Mattequartier, a section of the Old City of Bern. In December 1879, he succeeded in improving the quality of chocolate by the development of the conching machine, a lengthwise stirring device which gives a finer consistency and lets undesired aromas evaporate. He was also among the first chocolate makers to add cocoa butter Cocoa butter ...

Chocolate Bar
A chocolate bar is a confection containing chocolate, which may also contain layerings or mixtures that include nut (fruit), nuts, fruit, caramel, nougat, and wafers. A flat, easily breakable, chocolate bar is also called a tablet. In some varieties of English and food labeling standards, the term ''chocolate bar'' is reserved for bars of solid chocolate, with ''candy bar'' used for products with additional ingredients. The manufacture of a chocolate bar from raw cocoa bean, cocoa ingredients requires many steps, from grinding and refining, to conching and tempering. All these processes have been independently developed by chocolate manufacturers from different countries. There is therefore no precise moment when the first chocolate bar came into existence. Solid chocolate was already consumed in the 18th century. The 19th century saw the emergence of the modern chocolate industry; most manufacturing techniques used today were invented during this period. Dark chocolate, Dark, mi ...

It was founded in Vevey by François-Louis Cailler in 1819 and remained independent until the early 20th century, when it associated with other producers. Shortly before, Cailler opened its main factory at Broc in 1898. The company was finally bought by Nestlé in 1929 and became a brand. Cailler is the oldest chocolate brand still in existence in Switzerland. History Vevey factory François-Louis Cailler was born in Vevey, Switzerland in 1796. Together with Abram L. C. Cusin, Cailler first opened a grocery shop in Vevey in 1818, where chocolate was also sold. At that time, chocolate was essentially considered as a tonic rather than a delicacy, and it was generally dissolved in water or milk. Cailler soon opened his first chocolate factory in neighbouring Corsier-sur-Vevey in 1819. It is considered one of the first modern chocolate factories. The factory allowed Cailler to produce solid and affordable choc ...

The beans are then roasted and separated from their hulls to produce cocoa nibs. About 54–58% of the cocoa nibs is cocoa butter. The cocoa nibs are ground to form Chocolate liquor, cocoa mass, also known as cocoa liquor or chocolate liquor. Chocolate liquor is pressed to separate the cocoa butter from the non-fat cocoa solids. Phase (matter)
In the physical sciences, a phase is a region of material that is chemically uniform, physically distinct, and (often) mechanically separable. In a system consisting of ice and water in a glass jar, the ice cubes are one phase, the water is a second phase, and the humid air is a third phase over the ice and water. The glass of the jar is a different material, in its own separate phase. (See .) More precisely, a phase is a region of space (a thermodynamic system), throughout which all physical properties of a material are essentially uniform. Examples of physical properties include density, index of refraction, magnetization and chemical composition. The term ''phase'' is sometimes used as a synonym for state of matter, but there can be several immiscible phases of the same state of matter (as where oil and water separate into distinct phases, both in the liquid state). Types of phases Distinct phases may be described as different states of matter such as gas, liquid ...

Cocoa Solids
Dry cocoa solids are the components of cocoa beans remaining after cocoa butter, the fatty component of the bean, is extracted from chocolate liquor, roasted cocoa beans that have been ground into a liquid state. Cocoa butter is 46% to 57% of the weight of cocoa beans and gives chocolate its characteristic melting properties. Cocoa powder is the powdered form of the dry solids with a small remaining amount of cocoa butter. Untreated cocoa powder is bitter and acidic. Dutch process cocoa has been treated with an alkali to neutralize the acid. Cocoa powder contains flavanols, amounts of which are reduced if the cocoa is subjected to acid-reducing alkalization. Other definitions of cocoa solids, especially legal ones, include all cocoa ingredients (cocoa mass, cocoa powder and cocoa butter). In this case, cocoa solids without cocoa butter are specified as non-fat cocoa solids. Production Cocoa solids are what remains after cocoa butter is pressed from chocolate liquor. The li ...

Mesoamerica
Mesoamerica is a historical region and cultural area that begins in the southern part of North America and extends to the Pacific coast of Central America, thus comprising the lands of central and southern Mexico, all of Belize, Guatemala, El Salvador, and parts of Honduras, Nicaragua and northwestern part of Costa Rica. As a cultural area, Mesoamerica is defined by a mosaic of cultural traits developed and shared by its indigenous cultures. In the pre-Columbian era, many Indigenous peoples of the Americas, indigenous societies flourished in Mesoamerica for more than 3,000 years before the Spanish colonization of the Americas began on Hispaniola in 1493. In world history, Mesoamerica was the site of two historical transformations: (i) primary urban generation, and (ii) the formation of New World cultures from the mixtures of the indigenous Mesoamerican peoples with the European, African, and Asian peoples who were introduced by the Spanish colonization of the Americas.
