Food Apartheid
A food desert is an area that has limited access to food that is plentiful, affordable, or nutritious. In contrast, an area with greater access to supermarkets and vegetable shops with fresh foods may be called a food oasis. The designation considers the type and the quality of food available to the population, in addition to the accessibility of the food through the size and the proximity of the food stores. Food deserts are associated with various health outcomes, including higher rates of obesity, diabetes, and cardiovascular disease, specifically in areas where high poverty rates occur. Studies suggest that individuals living in food deserts have lower diet quality due to the scarcity of fresh produce and foods that are full of nutrients. In 2017, the United States Department of Agriculture reported that 39.5 million people or 12.8% of the population were living in low-income and low-access areas. Biography Washington grew up in New York City, attended Hunter College and received her master's degree in occupational biomechanics and ergonomics from New York University in 1981.
