Fermentations (wine)
The process of fermentation in winemaking turns grape juice into an alcoholic beverage. During Fermentation (biochemistry), fermentation, yeasts transform sugars present in the juice into ethanol and carbon dioxide (as a by-product). In winemaking, the temperature and speed of fermentation are important considerations as well as the levels of oxygen present in the must at the start of the fermentation. The risk of stuck fermentation and the development of several wine faults can also occur during this stage, which can last anywhere from 5 to 14 days for ''primary fermentation'' and potentially another 5 to 10 days for a ''secondary fermentation (wine), secondary fermentation''. Sparkling wine is a wine with significant levels of carbon dioxide in it, making it fizzy. While it is common to refer to this as champagne, European Union countries legally reserve that word for products exclusively produced in the Champagne (wine region), Champagne region of France. ''Candida'' is a genus of yeasts. It is the most common cause of fungal infections worldwide and the largest genus of medically important yeasts. The genus ''Candida'' encompasses about 200 species. Yeasts are eukaryotic, single-celled microorganisms classified as members of the fungus kingdom. The first yeast originated hundreds of millions of years ago, and at least 1,500 species are currently recognized. They are estimated to constitute 1% of all described fungal species. Some yeast species have the ability to develop multicellular characteristics by forming strings of connected budding cells known as pseudohyphae or false hyphae, or quickly evolve into a multicellular cluster with specialised cell organelles function. Jakub Karol Parnas
Jakub Karol Parnas, also known as Yakov Oskarovich Parnas (; January 16, 1884 – January 29, 1949) was a prominent Polish–Soviet biochemist who contributed to the discovery of the Embden–Meyerhof–Parnas pathway, together with Otto Fritz Meyerhof and Gustav Embden. He became a Soviet activist after the annexation of Western Ukraine in 1939. He was arrested during the Jewish Anti-Fascist Committee affair in 1949 and died in the prison, reportedly of heart attack. Biography Parnas was born in 1884 in Tarnopol, at that time part of Austria-Hungary, in the province of Galicia (now split between Poland and Ukraine), to Jewish parents. Otto Fritz Meyerhof
Otto Fritz Meyerhof (; 12 April 1884 – 6 October 1951) was a German physician and biochemist who won the 1922 Nobel Prize in Physiology and Medicine. Biography Otto Fritz Meyerhof was born in Hannover, at Theaterplatz 16A (now:Rathenaustrasse 16A), the son of wealthy Jewish parents. In 1888, his family moved to Berlin, where Otto spent most of his childhood, and where he started his study of medicine. He continued these studies in Strasbourg and Heidelberg, from which he graduated in 1909, with a work titled "Contributions to the Psychological Theory of Mental Illness". Gustav Georg Embden (10 November 1874 – 25 July 1933) was a German physiological chemist. Background Gustav Embden was a son of the Hamburg lawyer and politician George Heinrich Embden. His grandmother Charlotte Heine was a well-known salonnière and a sister of the poet Heinrich Heine. Education and career Embden initially studied in Freiburg, Strasbourg, Munich, Berlin, and Zurich under the famous physiologists of his time, including Johannes von Kries, Franz Hofmeister, Gaule, Paul Ehrlich, and Julius Richard Ewald. Glycolysis is the metabolic pathway that converts glucose () into pyruvic acid, pyruvate and, in most organisms, occurs in the liquid part of cells (the cytosol).
