The cuisine of the Mid-Atlantic states encompasses the cuisines of the states of New York, New Jersey, Pennsylvania, Delaware, and Maryland, as well as Washington, D.C. The influences on cuisine in this region of the United States are extremely eclectic, as it has been, and continues to be, a gateway for international culture as well as a gateway for new immigrants. The Mid-Atlantic is a region of the United States located in the overlap between the nation's Northeastern and Southeastern states. Greyhound (cocktail)
A greyhound (or Amazone) is a cocktail consisting of grapefruit juice and gin or vodka mixed and served over ice. If the rim of the glass has been salted, the drink is instead called a salty dog. History Harry Craddock's '' Savoy Cocktail Book'' from 1930 describes a "grapefruit cocktail" made with gin, grapefruit jelly, and ice. Craddock mentions that the cocktail is derived from similar cocktails. A recipe for a cocktail with the name "Greyhound" appears in ''Harper's Magazine'' in 1945: "The cocktails were made of gin, sugar, and canned grapefruit juice a greyhound. This cocktail was served at Greyhound's restaurant chain, Post House, that was located at bus terminals." After World War II, the recipe was more commonly made with vodka instead of gin. A Waldorf salad is a fruit and nut salad generally made of celery, fresh apples, walnuts, and grapes, dressed in mayonnaise, and traditionally served on a bed of lettuce as an appetizer or a light meal. The apples, celery, and grapes can all be green, which harmonizes the color palette of the dish. History Waldorf salad is named for the Waldorf-Astoria hotel in New York City, where it was first created for a charity ball given in honor of the St. Mary's Hospital for Children on March 13, 1896. __NOTOC__ Lobster Newberg (also spelled lobster Newburg or lobster Newburgh) is an American seafood dish made from lobster, butter, cream, cognac, sherry and eggs, with a secret ingredient found to be Cayenne pepper. A modern legend with no primary or early sources states that the dish was invented by Ben Wenberg, a sea captain in the fruit trade. He was said to have demonstrated the dish at Delmonico's Restaurant in New York City to the manager, Charles Delmonico, in 1876. After refinements by the chef, Charles Ranhofer, the creation was added to the restaurant's menu as ''Lobster à la Wenberg'' and it soon became very popular.
