Cotija
Cotija is a municipality located in the Mexican state of Michoacán. The municipality has an area of 504.05 km2 (0.91% of the surface of the state), and is bordered to the north by Jiquilpan and Villamar, to the east by Tocumbo, and to south by the state of Jalisco. The municipality had a population of 18,207 inhabitants according to the 2005 census. Its municipal seat is the city of Cotija de la Paz (pop. 12,453). Cotija is the birthplace of several religious figures, including Saint Rafael Guízar Valencia and Father Marcial Maciel. The economy of the municipality is mostly based on agriculture and ranching. Cotija cheese is named after the city. The municipal president of Cotija and its many outlying communities was José Mendoza Morfín in 2008. Cotija Cheese
Cotija is an aged Mexican cheese made from cow's milk and named after the town of Cotija, Michoacán. White in color and firm in texture, its flavor is salty and milky. "Young" (or fresher) cotija cheese has been described as akin to a mild feta, while aged (''añejo'') cotija is more comparable in flavor to hard, aged cheeses like Parmesan. Cotija softens when exposed to heat, but does not melt. Marcial Maciel
Marcial Maciel Degollado (March 10, 1920 – January 30, 2008) was a Mexican Catholic priest who founded the Legion of Christ and the Regnum Christi movement. He was general director of the Legion from 1941 to 2005. Throughout most of his career, he was respected within the Church as "the greatest fundraiser of the modern Roman Catholic church" and as a prolific recruiter of new seminarians. Late in his life, Maciel was revealed to have been a long time drug addict who sexually abused many boys and young men in his care. After his death, it came to light that he had also maintained sexual relationships with at least four women, one of whom was a minor at the time. He fathered as many as six children, two of whom he is alleged to have sexually abused. The Congregation of the Legionaries of Christ ( la, Congregatio Legionariorum Christi; abbreviated LC; also Legion of Christ) is a Roman Catholic clerical religious order made up of priests and candidates for the priesthood established by Marcial Maciel in Mexico in 1941. Maciel was also Director General of the congregation for over 60 years until forced to step down in January 2005 as a result of a child sexual abuse scandal. Villamar is a municipality in the Mexican state of Michoacán. Political entity The municipality is located in the northwest of the state,189 kilometres from the state capital of Morelia. It has a territory of 352.39 square kilometers, bordering the municipalities of Venustiano Carranza and Pajacuarán on the north, on the east with Tangamandapio, Las Zarquillas, and Chavinda, on the south with Tingüindín and Tocumbo, and on the east with Cotija, Jiquilpan and Sahuayo. Agustín de Iturbide (; 27 September 178319 July 1824), full name Agustín Cosme Damián de Iturbide y Arámburu and also known as Agustín of Mexico, was a Mexican army general and politician. During the Mexican War of Independence, he built a successful political and military coalition that took control in Mexico City on 27 September 1821, decisively gaining independence for Mexico. After securing the secession of Mexico from Spain, Iturbide was proclaimed president of the Regency in 1821; a year later, he was proclaimed Emperor of Mexico, reigning briefly from 19 May 1822 to 19 March 1823.
