Egg Bhurji
Egg bhurji, also known as Anda Bhurji, is a scrambled eggs dish which is a popular Indian street food and a breakfast, lunch or dinner recipe. Originating from the Indian subcontinent, it is sometimes compared with the Parsi dish ''akuri''. The Parsi dish akoori or akuri is very similar to egg bhurji with a few differences. Just like bhurji, akuri is filled with many aromatics like ginger, onion and other spices. However, bhurji eggs are cooked until dry, whereas akoori eggs are cooked less while still runny. The difference lie in its preparation and addition of sautéed chopped onions, chilies and optional spices. Bharbhunja (Hindu)
The Bharbhunja are a largely Hindu caste found in North India and Maharashtra. They are also known as Kalenra in Maharashtra, Mehra in Punjab and in Uttar Pradesh. Ustad Shamsuddin "Bhurji" Khan (1890–1950) was a Hindustani Classical vocalist of the Jaipur-Atrauli Gharana founded by his father, Ustad Alladiya Khan. Early life Ustad Bhurji Khan was the third and the youngest son of Ustad Alladiya Khan. Despite this, Ustad Alladiya Khan felt that Ustad Bhurji Khan was the most capable of his children. Health In his late youth, Ustad Bhurji Khan fell seriously ill with influenza while visiting Uniara, Rajasthan. Musical style and training Ustad Bhurji Khan's illness affected his musical growth. Brain-damage from the illness contributed to his forgetfulness and memory loss. As a result, his father abandoned training him, where he continued his musical training with his uncle, ''Ustad Haider Khan''.
