Baja California Wine Industry
The Baja California wine industry is concentrated in a small area of the state of Baja California, Mexico. Most of the production is in the Valle de Guadalupe, there is also grape and wine production in some neighboring valleys. These valleys all have Mediterranean-type microclimates, instead of desert, thanks to sea breezes and fog which comes inland from the Pacific Ocean. Though a bit warmer and drier, the region produces many of the same grapes as in California, US, producing varietals that originated in southern France, Spain, Portugal, Italy and Greece. While wine was first made here in the late 17th century/early 18th, premium winemaking did not begin until the 1980s, with the success of the Monte Xanic winery. Wine making is very eclectic here, with no one style dominating the scene. Molokan
The Molokans ( rus, молокан, p=məlɐˈkan or , "dairy-eater") are a Spiritual Christian sect that evolved from Eastern Orthodoxy in the East Slavic lands. Their traditions—especially dairy consumption during Christian fasts—did not conform to those of the Russian Orthodox Church, and they were regarded as heretics (''sektanty''). Maceration is the winemaking process where the phenolic materials of the grape—tannins, coloring agents (anthocyanins) and flavor compounds—are leached from the grape skins, seeds and stems into the must. To macerate is to soften by soaking, and maceration is the process by which the red wine receives its red color, since raw grape juice (with the exceptions of teinturiers) is clear-grayish in color. In the production of white wines, maceration is either avoided or allowed only in very limited manner in the form of a short amount of skin contact with the juice prior to pressing. This is more common in the production of varietals with less natural flavor and body structure like Sauvignon blanc and Sémillon. Durif
Durif is a variety of red wine grape primarily grown in Australia, California, France, and Israel. Since the end of the 20th century, wineries located in Washington's Yakima River Valley, Maryland, Arizona, Texas, West Virginia, Chile, Mexico's Baja California Peninsula, and Ontario's Niagara Peninsula have also produced wines from Durif grapes. Nebbiolo (, ; pms, nebieul ) is an Italian red wine grape variety predominantly associated with its native Piedmont region, where it makes the '' Denominazione di Origine Controllata e Garantita'' (DOCG) wines of Barolo, Barbaresco, Roero, Gattinara, Carema and Ghemme. Nebbiolo is thought to derive its name from the Italian or Piedmontese , meaning " fog". Tempranillo
Tempranillo (also known as Ull de Llebre, Cencibel, Tinto Fino and Tinta del Pais in Spain, Aragonez or Tinta Roriz in Portugal, and several other synonyms elsewhere) is a black grape variety widely grown to make full-bodied red wines in its native Spain. A margarita is a cocktail consisting of Tequila, triple sec, and lime juice often served with salt on the rim of the glass.
