Common Sole
The common sole, Dover sole, or black sole (''Solea solea'') is a species of flatfish in the family Soleidae. It is one of the largest fish in the '' Solea'' genus. It lives on the sandy or muddy seabed of the northern Atlantic and the Mediterranean Sea where it often partially immerses itself in the substrate. The upper side is greyish-brown while the underside is white. It grows to a maximum length of about . The species is prized as a food fish, being caught mostly by Bottom trawling on the seabed. Description The small eyes are close to each other on the right side of the body. This gives the fish the possibility of lurking half-buried in the sand for passing prey. (or ) is a classic French fish dish consisting of sole - floured and fried - and served with hot melted butter, lemon juice, and parsley. Many recipes specify Dover sole, but the technique can be used with other similar flatfish. Etymology and background The term translates literally as "in the style of the miller's wife". It means that the dish, usually fish, is first dusted with flour and then cooked in butter. Anything cooked ''à la meunière'' is also generally sprinkled with lemon juice and chopped parsley. ''Hemibdella soleae'' is a marine species of leech in the family Piscicolidae and the type taxon of its genus.
