Soan Papdi
Soan papdi is a popular dessert in the Indian subcontinent. It is made of gram flour (besan), all-purpose flour, ghee, sugar and milk. It is usually cube-shaped or served as flakes, and has a crisp and flaky texture. Traditionally sold loose in rolled paper cones, modern industrial production has led to it being sold in the form of tightly formed cubes. Origin The name of the sweet according to various dictionaries derives from sohan in Hindustani, which is etymologically derived from the Sanskrit word shobhan ("beautiful"). Though soan papdi itself has no confirmed origin. One hypothesis is that it originated in the western state of Maharashtra, India. Culinary anthropologist Kurush F. Dalal states that soan papdi is a Persian dish, with the word "soan" being of Persian origin from the desert ''sohan pashmaki''. ''Pişmaniye'' is a Turkish confection made by blending flour roasted in butter into pulled-sugar and then forming it into fine strands. It is sometimes garnished with ground pistachio nuts. Although it is sometimes compared to cotton candy, both the ingredients and method of preparation are significantly different. Dragon's beard candy ( zh, t=龍鬚糖, s=龙须糖, p=lóng xū táng, first=t) or Chinese cotton candy or Longxusu ( zh, t=龍鬚酥, s=龙须酥, p=lóng xū sū) is a handmade traditional Chinese confectionary similar to floss halva or Western cotton candy. Dragon's beard candy was initially created in China, but was soon popularized in other parts of East Asia and South East Asia. It became a regional delicacy in South Korea in the 1990s, Singapore in the 1980s, then in Canada and the United States. It has a low sugar content (19%) and low saturated fat content (2%).
